In honor of “Pumpkin Season,” and National Pumpkin Day on October 26, we are sharing some of our favorite pumpkin recipes! When you’re carving your front porch jack-o-lantern, don’t just throw away the insides of your pumpkin, save them – and the seeds – to use in some of these delicious, warming and healthIER recipes!

Here’s a recipe for basic Toasted Pumpkin Seeds and then Three Delicious Variations. Pumpkin seeds have a variety of nutrients like magnesium and manganese, copper, protein and zinc.

We love these clean-eating pumpkin muffins created by the girl at Tone It Up!

INGREDIENTS: 

1 1⁄2 cups rolled oats 1 cup pumpkin puree

1⁄4 cup unsweetened apple sauce

1 Tbsp vanilla extract

2 Tbsp melted coconut oil

1⁄4 cup unsweetened almond milk

1⁄4 cup pure maple syrup 1 tsp baking powder

1⁄2 tsp baking soda

1⁄4 tsp salt

1 tsp cinnamon coconut oil spray

DIRECTIONS:

1. Preheat the oven to 350 degrees. Lightly spray a muffin pan with cooking spray ~ use cupcake liners to take these on the go!

2. Combine all ingredients in a food processor and mix until well combined. Pour into greased muffin tins and bake for 15 minutes.

3. Recipe makes 10-12 muffins, so these are perfect for meal prep! Enjoy two muffins per serving.
